Types of Tea: How to Classify Tea in China?

Tea is said to be the healthiest beverage in the world. Those who love tea shall rejoice, and those who don’t drink tea shall start drinking it. However, for tea aficionados and beginners, there are different types of tea with different benefits to each one of it. Depending on the type of tea and processing method, different teas will bring different benefits to the table.

In total, there are six types of teas depending on its fermentation process.

They are:

1. green tea(unfermented)

Production process:Fixation, rolling, drying

2. yellow tea(slight-fermented),

Production process:Fixation, heaping for yellowing,drying

3. white tea(mild-fermented),

Production process:Steaming and pre-withering in the open air, withering, roasting

 

白茶

4. oolong tea(semi-fermented),

Production process:Withering, light rolling, final rolling, roasting

 

乌龙茶

5. black tea(deep-fermented), and

Production process:Withering, rolling, fermentation, roasting, re-roasting

 

红茶

6. dark tea (post-fermented).

Production process:Fixation, light rolling, pile permentation, final rolling, roasting
